  1. Wash potatoes and put in cooker to boil with enough water and lil salt
  2. After 2 whistle swich off gas and take potato out.
  3. Peel potatoes and keep aside in a bowl.
  4. Cut from middle in 2 halves and sprinkle termeric powder and salt on same.
  5. Now in a kadhai take oil to fry these potatoes.
  6. Once oil is hot put potatoes and fry them till golden brown.
  7. Once done,take potatoes out in same bowl.
  8. Now in same oil, put one tbs cumin seed, heeng,dry chilli whole, bay leaf,ginger paste and once crackled,add chopped tomatoes
  9. Do not grind the tomatoes as it won't give desired texture.
  10. Cook for 2 min, once tomatoes mashed add salt as per taste, remeber we already had some added in potatoes, lil termeric powder,red chilli powder and. Cook for next one min
  11. Once it starts leaving oil,add fried potatoes and stir well. Add lil water so mix masala.well.
  12. Once masla layers on potatoes,now add slited green chillies and 1/2 cup water.
  13. Cover the wok and cook for next 8-10 min to thickens the gravy.add sugar now,it gives nice colours and improves taste.
  14. Switch off gas serve hot with Luchi/Puri/paratha
