Instructions to make Salsa Verde (Green Salsa):

  1. This is a tomatillo. I used ones with large fruit in the middle.
  2. Peel the tomatillos and wash them well.
  3. Quarter half of the onion and finely chop another quarter. Mince the cilantro and finely chop the scallions.
  4. The peppers on the left are Serrano chili peppers. They're much longer and thinner than the jalapeño on the right and have a milder flavour.
  5. Slice the Serrano chili peppers in half vertically and use a spoon or knife to get rid of the seeds.
  6. Boil some water with a pinch of salt in a saucepan and add the onion (the quartered half), tomatillos, and cilantro in that order.
  7. When the water comes to a boil once again, stop the heat and drain the vegetables. Add the vegetables to a food processor and blend them until smooth.
  8. Transfer the mixture to a bowl and mix in the finely chopped onion, scallions, cilantro, and salt.
  9. Chill the salsa in the refrigerator and serve with chips.
