  5. Pour over the beaten egg whites, add the cake flour and fold gently until combined. Pour the cake batter into the prepared tin and swirl in the 3 tablespoons of the wood apple jam. Bake for 30 minutes until golden brown.
  6. Let the cake cool in the pan. Whip the cream. Segment the pomelo, discarding any pith. Remove the cake from the baking tin and sprinkle with rose petals. Serve a slice of cake with a dollop of camel cream and a segment of shaddock.
