Yangchow fried rice, a specialty from eastern China is distinct because individual grains of rice are cooked in the egg, and soy sauce, and oyster sauce. This turned out to be a great way to use up left over pork roast. I used fresh mushrooms, cabbage and frozen mixed veggies, and vegetable oil with a splash of sesame oil. Crispy roast pork belly with egg fried rice. Ken Hom's classic crispy pork takes time to prepare but demands no great skill. Egg fried rice is a great way to use up leftover rice.
